Mum’s Banana Cake

Well I have had some people asking about this recipe over the last few days, so I thought what a good place to put it up. Here are the ingredients,
 
125g marg
1 cup sugar
2 eggs
3 ripe squashed bananas
1/2 cup sour cream (or milk soured with lemon juice)
extra squirt lemon juice
1/2 tab bicarb soda
2 1/2 cups Self Raising flour
 
Throw them all in a big bowl and beat well, until colour lightens
 
Grease and flour a loaf tin or a big tin. Fill about 2/3 full
 
bake in a moderate oven (180 degrees Celsius) for about 1 hr or until deep golden colour
 
lemon icing is nice on top, bit of butter, lemon juice and icing sugar mixture.
 
I made this cake the other day, it is fantastic!! Totally recommend it. The only thing I would add to this mix would be about 1/3 cup of Oil, just to make it a bit more moist.
